Subaru Scandal and Tuna or Turkey Salad Sandwich

I mentioned a few weeks ago that our Subaru was for sale. It is still for sale actually. The only 2 people that have “shown interest” were from companies that want us to pay for them to sell our vehicle. Scum suckers.

We are looking for a newer used vehicle but are having problems finding something. We know what we’d like, I should point out, but have only come across one that fits our needs- another Subaru. However, the dealer contacted us to schedule a test drive but that same day, told us that it was sold. Of course, now they won’t leave us alone.

We wouldn’t need a new vehicle if the manual for our car was correct or if Subaru would’ve helped us out when the AWD stopped working after towing it to Minnesota from Indiana when we moved. The manual stated that you can tow the Forester with the back wheels down…..that was not the case and we found out last winter, months later.

We were quoted that it would cost around $2000 to fix and that is not happening. We contacted the company to let them know the issue. The representative wasn’t very helpful nor friendly and eventually requested that we take it to a Subaru dealer to have it checked out. This was after we had already had it looked at by our local mechanic-I guess that wasn’t good enough. Plus, we were asked in the dead of winter with a non-functioning AWD vehicle and the closest dealer almost an hour away. We were also told that they would not pay to have this fixed and the rep didn’t believe the manual was wrong. We told her the page and that we’d photocopy and send it for her reading pleasure. She wouldn’t budge until we paid for a second look-see. We refused to go since no help was coming from this.

I’m sure once we got there, a new Subaru might just be the answer for us from a salesperson supposedly in the know about our situation. I miss my dad working on the vehicles; he is a mechanic that can fix nearly anything. I bring this up because we are running out of time to find a vehicle with decent mpg, a large cargo area and AWD for winter. We can’t afford (these words echo throughout my posts I know) to have a monthly payment for a new car so we will need to trade-in both of our vehicles.

While I was thinking about this and re-posting the Forester in the area ads the other day, I decided I was hungry for a tuna salad sandwich. I made turkey salad over the weekend with my leftover turkey and I think it was then that I began contemplating when I could have another. I wasn’t a fan of any “something salad” sandwich when I was younger. I think it was the slimy-looking texture and if I don’t know what goes into the dish, I want no part of it. I still can’t handle egg salad and no way am I going to purchase any from the deli section. You can put practically anything in these to fit your taste and they are such an easy pleaser. With Thanksgiving leftovers this would be a cinch. Here’s what I usually have:

Tuna Salad Sandwich

Tuna Salad Sandwich (Sammies)
Serves 2 large sandwiches

12-16 ounces of canned tuna (or turkey)
½-3/4 cup apple, cored and diced or grapes, quartered
1 stalk of celery, diced (or carrots)
½ onion, diced
1 ½ tbsp pecans, pine nuts or walnuts, toasted and chopped (or not toasted)
1 ½ tbsp dried cranberries or golden raisins
1 tbsp thyme, sage, parsley or cilantro (I used both cilantro and thyme)-optional
¼ cup crumbled feta or manchego, crumbled-optional
1 tbsp lemon juice (or crushed capers with some juice)
1-2 tbsp mayo (Omit this to keep calories down, just add more lemon/mustard or vinaigrette)
2 tsp to 1 tbsp spicy mustard-optional
½ to 1 loaf of your favorite bread (I used French bread), toasted or not

Chop or dice ingredients and toss in bowl with tuna, herbs, lemon juice, mayo, cheese (optional) and mustard (optional). Toast your bread, if you wish and add tuna salad (or turkey). I think this would make a tasty sort of panzanella by making the bread into croutons and tossing with the salad mixture. That’s my plan for next time.
