My Funny Man and Biscuits with Sausage Gravy

I am going to reveal a little about my husband…something you might recognize in someone else. Don’t get me wrong, this comes from love and fun because that’s how we roll. (We being my husband and I.)

One of these revealing episodes happened Friday evening while we were home and went something like this:

I wasn’t feeling like doing much of anything after a busy day. It took some work to get him to make something for dinner but it happened. I hinted the entire afternoon that I didn’t feel like cooking and that we probably shouldn’t go out and I guess, when I looked at Greg, when dinner time rolled around (when Greg says he’s hungry) and said “I’m not cooking”-that’s when it clicked that he was going to have to make something. Subtlety doesn’t work with him. I stop hinting after about 10 statements or so.

We had a nice pasta dish, he even took the dishes to the kitchen and we sat together enjoying some of our evening. Now comes the part where I walked into the kitchen…a big ol’ mess. I understand others don’t clean as they go (as I do) and I give a little bit but this was beyond that level. It was a level where you stop because it takes your breath away and you get this sinking feeling that you are going to have to fix it even though it wasn’t yours to fix.

I clean the kitchen throughout the day (sometimes it feels like it takes half of my time) and when the weekend rolls around, Greg should know by now that I do not want to spend Friday night doing dishes and cleaning everything up, especially when he made the chaos. I told him that he must be here (on earth) to mess up what I clean and he said, while I thought he was sitting on the couch all comfy, “I don’t know what you’re talking about”…it was then that I looked his way to see the couch cushions on the floor and the whole living room area a mess. I don’t know why. Sometimes he just feels like moving them and knocking things over.

I was just staring at the kitchen before turning around to look at him in the living room, less than a minute. He was serious with his statement is the scary thing; I can’t leave him alone. We had some laughs because the situation is normal for us and you can’t help but be amused by something like that. We both tackled the dishes that night, as we usually do during the week.

Maybe I will share a few more stories or quotes later. He is my funny man. I made my funny man biscuits and gravy Sunday, which was a breakfast for dinner day. The sausage gravy recipe is my own. I love a nice, slightly spicy and very peppery gravy, with or without sausage. The biscuits were whipped up from a Jiffy mix but I think Chris Kimball’s recipe at Obsessed With Baking would be delicious.

Biscuits and Sausage Gravy

Sausage Gravy

Ingredients:
1 lb. hot or mild pork sausage
3 tbsp butter
3-4 tsp salt
½ tsp white pepper (or more)
½ tsp smoked paprika (optional)
1 tbsp fresh thyme
4-5 tbsp flour
3 cups of milk
2 tbsp heavy cream

Biscuits: makes about 12 small
2 cups Jiffy mix
2/3 cup milk
1 tbsp heavy cream (optional)

Cook the sausage in a skillet as directed. Add butter and spices to the skillet, cook for about 2 minutes. Constantly stir in the flour for about 3 minutes, then add milk and heavy cream, whisking and bring to a boil. Turn down the heat and stir until it reaches gravy consistency. Add salt and pepper to taste.

Preheat oven to 400 and combine all biscuit ingredients in a bowl. I used a square muffin pan to place the dough in and cooked for about 15 minutes. You can roll out the dough and use a biscuit cutter placing the biscuits on a cookie sheet also.

    Oh lord now there’s a memory from my childhood:) I grew up eating biscuits and gravy! I didn’t much care for it when I was little, but now? I crave it sometimes!!!! Esp. with spicy sausage. Looks amaaaazing.
